How to Prepare Kale and other Greens... Try this recipe for Kale tonight.

There are different types of kale and Dark leafy greens that I prepare often. I use the same technique for all of them. When shopping at the market buy which green that looks the best that day.
I went to my Whole Foods market today. I am lucky that they carry a wide verity of gorgeous greens grown locally.
They all looked so good that I bought five different types. I bought green kale, red russian kale, Rainbow swiss chard, Red swiss chard, and Collard greens. I use the same recipe for all of them.
While I was at Whole Foods I made a salad from their salad bar. I highly recommend it if you are there during a meal time.
Now for the easiest and best tasting kale recipe... First wash each leaf under cool running water, and chop off the end of the stems. Sometimes if the stem is thick and big I will remove it. Usually I just trim the ends off.
Once you have washed and trimmed the Kale, today I am using the Red russian kale and the green kale. Chop up the greens. Chop up fresh garlic, for this amount of kale I used five cloves of garlic. Have a handful or two of dried cranberries and good olive oil.
Heat your pan over medium-high heat, once hot add olive oil, then add the chopped kale. With kitchen tongs stir the kale until it starts to wilt, be careful not to let it brown or burn. This will take 4-5 minutes. Next add chopped garlic and cranberries, keep stirring so garlic heats through but does not brown 1-2 min. Finish with sea salt and fresh cracked pepper.

Happy Valentines Day Brownies

💞Brownies In honor of Valentines Day I created this brownie recipe. It is refined sugar free,dairy free and gluten free.The ice cream is vegan Nada Moo Vanilla.  It is a treat for the whole family. 2 TBS. Ground flax meal mixed with 5 TBS. Water (set aside) 1/2 cup Oat Flour 1/2 cup Cacao powder 2/3 cup cocoanut sugar 1/2 tsp. Vegan Lasagna

Vegan Lasagna This is my go to recipe for Lasagna, it is gluten free, dairy free, and meat free. Since it is summertime I made a fresh low cook tomato sauce, in colder months I would extend the cooking time of this sauce to yield a depth of flavor. For a warm summer night this was delicious.  First I sautéed the mushrooms onions and garlic - then I add tomato paste and canned tomatoes. I love these tomatoes I find them at Whole Foods. While the sauce cooks a bit I sauté grated zucchini and frozen chopped spinach until there is no moisture left. To make the creamy filling we crumble organic firm tofu, vegan cheese,onion powder, garlic powder, nutritional yeast, chopped fresh italian parsley,salt and pepper and flax meal eggs.
