Hello! As promised yesterday here is my post on dinner last night. My husband wanted Burritos… so I decided to make this Chicken Fajita Style dinner, I had tortillas and beans and cheese for the family. Everyone could assemble their own burrito just as they liked it. Since I have given up all grains I could eat the chicken alone with avocado on it.
I want to do a future post on why I have given up grains. For now I will tell you it has been 4 months and I feel great! I have so much energy through the day. I sleep like a rock. Recipe for Chicken Fajitas
1 pound of chicken breast cut into 2-inch strips
1 T of Coconut Oil
1 tsp chili powder
1/2 tsp. cumin
1 onion thinly sliced
1 clove garlic minced
2 different colored bell peppers thinly sliced
mushrooms sliced ( i used the box of pre-sliced mushrooms)

: Heat up a skillet on the stove top and add your coconut oil and mushrooms, cook on high till they have released their water and are a good color. Turn heat down to medium and add chicken, spices onion , garlic and peppers. cook until desired doneness for the veggies. Note you may need to add a little more oil when you add the remaining ingredients. Salt and Pepper to taste.

Chipotle Edamame Recipe This is a quick and delicious way to spruce up that bag of frozen edamame in your freezer. Ingredients 1 bag of frozen edamame,( i used shelled, but you could also use them unshelled) 2-3 chipotle peppers from the can (chopped) 3 garlic cloves minced 1 Tablespoon of olive oil Directions If using edamame in the shell cook it first, if using shelled place the frozen edamame in a large skillet with the olive oil. Cook over medium heat. Add the chipotle peppers and some of the liquid of the peppers, depending on how spicy you like it. Add chopped garlic and continue to stir until done.
