Vegan Maple-Oat Banana Bread and Walking Outside

Vegan Maple-Oat Banana Bread

While on my journey to eat a Plant Based Diet I came across the Cookbooks By Thug Kitchen. Thug Kitchen has 3 cookbooks and I own them all  www.thugkitchen.com In these books the authors use a colorful language throughout that makes the recipes entertaining and funny especially when I am cooking with my 14 year old daughter Makenna. This is their Banana Bread recipe and to quote the authors"Forget that banana cake bullshit you're used to eating and telling yourself it's healthy. This is the real fucking deal. A fistful of fiber with just the right amount of sweetness, this loaf will have you coming back for more." This bread will have you coming back for more. We have made this multiple times and I hope you give it a try too.

 recipe: maple-oat banana bread

2 cups oat flour(grind rolled oats yourself in food processor)
1 cup whole wheat pastry flour
13/4 teaspoon baking soda
3/4 teaspoon cinnamon
1/2 teaspoon slat
1/4 cup of almond or other non dairy milk
1/4 teaspoon aplle cider vinegar
2 cups mashed banana
1/3 cup maple syrup
3 Tablespoons of olive oil
1 teaspoon vanilla
1 Tablespoon of sugar (we use coconut  sugar)

#1 Heat oven to 350 degrees. Grease a standard loaf pan so your bread won't stick. This shit is critical so don't skip this step.
#2 Grab a medium bowl and mix together the flours, baking soda, cinnamon, and salt. set aside.
#3 In a small glass mix together the milk and vinegar. Then grab a large bowl and mix together the mashed banana, maple syrup, olive oil, and vanilla. Once all that is mixed up add milk vinegar mixture then add flour mixture and mix until just combined.
#4 Pour the batter into your greased pan and sprinkle the sugar over the top. Bake for 30-40 min.
After you make and eat your banana bread it will be time to go outside for a walk. This sounds simple but in my FunctionetiKs.com business I work with clients that have forgotten or are in so much pain they can not go outside for a walk. If you are in pain that prohibits you from walking please visit my website and schedule a free consultation www.Functionetiks.com www.Functionetiks.com For everyone else strap on your walking shoes and get outside. Benefits of walking outside are you get fresh air, your body has to navigate the uneven terrain like curbs, rocks, grass, and or dirt. This helps with balance and stability and is so much better for you than hanging on a treadmill and doing the same gait over and over. While you are outside look for a grassy area under a tree and lay down and maybe stretch your hamstrings or just enjoy the view like I am pictured doing above. Thanks for reading. Once the turkey and onions are done cooking remove from the heat and stir in the instant rice. In a large casserole add chopped cabbage to the bottom, then place the turkey and rice mixture, top with the can of soup, spreading it on top of the entire casserole, finally add a can of water. Bake uncovered @350 degrees for 30-40 minutes.

Orange Bundt Cake

This week I went to lunch in Rancho Santa Fe at an adorable cafe named Thyme. Thyme specializes in fresh salads, soups, and other light fare. The thing that got me most excited was their bakery. They have a beautiful bakers rack filled with gorgeous homemade delights just like your Grandma would make. The bakers rack was filled with rustic pies, and cakes. One cake that caught my eye was an Orange Bundt Cake. I have an orange tree so I was inspired to come home and try to make it. I went to the internet in search of a recipe, and discovered one from all recipes.com that I altered a bit. Here it is. Ingredients 1 cup of butter, softened 2 cups of sugar 4 eggs 3 teaspoons of fresh grated orange rind 1 teaspoon of vanilla extract 3 cups of flour 3 teaspoons of baking powder 1 cup of milk Glaze 1 cup of confectioners sugar 4 teaspoons of fresh squeezed orange juice 1 teaspoon of fresh grated orange rind Directions 1.
