Spring is here and a beautiful spring it is. It is time to get outside and enjoy our bodies and the weather. I have been absent from blogging for a few months, I will be posting new blogs on a regular basis. I would love to hear from you about things you are doing in your own lives to feel and be healthy. As far as myself goes I am on a constant quest for new and exciting recipes. Chicken Ceasar Salad Burrito This is a quick and easy weeknight meal your whole family will like. First you need to grill chicken breasts. I do this on my inside stovetop griddle. Second you need Ceasar Salad. You can buy the bag of ready to go caesar salad, or as in my case use fresh romaine lettuce with a bottled Ceasar Dressing with your favorite croutons. I used white flour tortillas from Trader Joes, (my family prefers them to the whole wheat), use what your family likes. Layer the Ceasar Salad in the tortilla, top with sliced chicken breast. Roll the tortilla around the salad and chicken. Enjoy! My daughter calls these green burritos.
