Black Bean Quesadillas and fresh Kale salad....It is what's for dinner tonight.
Ingredients
1 can of black beans, rinsed and drained
extra sharp cheddar cheese, grated
canned green chilies
whole wheat tortillas
Directions... I use a cast iron grill on my stovetop. I place a tiny bit of vegetable oil on the grill, then place the tortillas on the grill and place ingredients on the tortilla, top with another tortilla. Cook for a few minutes until the cheese starts to melt, then flip it over.
Serve with a fresh kale salad, with a drizzle of olive oil and fresh lemon juice.
